A warm and hearty fish chowder featuring cod, sweet corn, and crispy bacon, perfect for chilly evenings.
Ingredients
- 1 lb cod fillets
- 2 cups corn (fresh, frozen, or canned)
- 2 medium potatoes, diced
- 4 slices bacon, chopped
- 1 onion, diced
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the chopped bacon in a large pot over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
- Add the diced onion to the pot and cook until softened.
- Stir in the diced potatoes and corn, cooking for a few minutes.
- Pour in the broth and bring to a boil. Reduce heat and simmer until the potatoes are tender.
- Add the cod fillets and cook until the fish is opaque and flakes easily.
- Stir in the heavy cream, seasoning with salt and pepper to taste.
- Serve hot, garnished with crispy bacon and chopped parsley.
Notes
For a thicker chowder, consider puréeing a portion of the potatoes before adding the cream.
