Description

A warm and hearty fish chowder featuring cod, sweet corn, and crispy bacon, perfect for chilly evenings.


Ingredients

  • 1 lb cod fillets
  • 2 cups corn (fresh, frozen, or canned)
  • 2 medium potatoes, diced
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. Cook the chopped bacon in a large pot over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
  2. Add the diced onion to the pot and cook until softened.
  3. Stir in the diced potatoes and corn, cooking for a few minutes.
  4. Pour in the broth and bring to a boil. Reduce heat and simmer until the potatoes are tender.
  5. Add the cod fillets and cook until the fish is opaque and flakes easily.
  6. Stir in the heavy cream, seasoning with salt and pepper to taste.
  7. Serve hot, garnished with crispy bacon and chopped parsley.

Notes

For a thicker chowder, consider puréeing a portion of the potatoes before adding the cream.
