Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons jerk seasoning
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 cup jasmine rice
- 1 ½ cups water
- 1 teaspoon salt
- 1 cup fresh pineapple, diced
- ½ cup fresh basil leaves, chopped
- 1 tablespoon soy sauce
Instructions
- Prepare the shrimp: In a bowl, combine the shrimp with jerk seasoning, 1 tablespoon of olive oil, and lime juice. Allow the shrimp to marinate for at least 15 minutes while you cook the rice.
- Prepare the rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice, 1 ½ cups of water, and 1 teaspoon of salt. Bring the mixture to a boil. Once boiling, reduce the heat to low and cover. Allow the rice to cook for about 15-20 minutes or until tender and all the water has absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
- Assemble the dish: Heat a skillet over medium-high heat. Add the marinated shrimp, cooking for 2-3 minutes on each side until they are opaque and cooked through. Remove from heat and fold in the diced pineapple and chopped basil.
- Garnish and serve: Fluff the rice with a fork and serve it on a plate. Top the rice with the jerk shrimp mixture, adding more fresh basil if desired. Drizzle soy sauce over the top and enjoy!
