Ingredients
- 12 ounces (340 g) (340 grams) shrimp, peeled and deveined
- 8 ounces (227 g) (225 grams) fettuccine pasta
- 2 tablespoons olive oil (30 ml)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 teaspoon (5 ml) ground allspice
- 1 teaspoon (5 ml) dried thyme
- 1 teaspoon (5 ml) paprika
- 1/2 teaspoon (3 ml) cayenne pepper
- 1 cup coconut milk (240 ml)
- 1 lime, juiced
- Salt, to taste
- Black pepper, to taste
- 2 green onions, chopped
- Fresh parsley, chopped for garnish
Instructions
- Bring a large pot of salted water to a boil.
- Add the fettuccine pasta to the boiling water and cook according to package instructions until al dente.
- Drain the pasta and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and sauté for another 30 seconds.
- Add the sliced red and green bell peppers to the skillet and cook for 4-5 minutes until they start to soften.
- Season the shrimp with salt and black pepper.
- Add the seasoned shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side.
- Stir in the ground allspice, dried thyme, paprika, and cayenne pepper, mixing well.
- Pour in the coconut milk and lime juice, stirring to combine.
- Let the sauce simmer for 3-4 minutes until slightly thickened.
- Add the cooked fettuccine to the skillet, tossing to coat the pasta with the sauce.
- Adjust seasoning with additional salt and black pepper if needed.
- Stir in the chopped green onions.
- Garnish with fresh parsley before serving.
