Ingredients

  • 12 ounces (340 g) (340 grams) shrimp, peeled and deveined
  • 8 ounces (227 g) (225 grams) fettuccine pasta
  • 2 tablespoons olive oil (30 ml)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 teaspoon (5 ml) ground allspice
  • 1 teaspoon (5 ml) dried thyme
  • 1 teaspoon (5 ml) paprika
  • 1/2 teaspoon (3 ml) cayenne pepper
  • 1 cup coconut milk (240 ml)
  • 1 lime, juiced
  • Salt, to taste
  • Black pepper, to taste
  • 2 green onions, chopped
  • Fresh parsley, chopped for garnish


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the fettuccine pasta to the boiling water and cook according to package instructions until al dente.
  3. Drain the pasta and set aside.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes.
  6. Stir in the minced garlic and sauté for another 30 seconds.
  7. Add the sliced red and green bell peppers to the skillet and cook for 4-5 minutes until they start to soften.
  8. Season the shrimp with salt and black pepper.
  9. Add the seasoned shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side.
  10. Stir in the ground allspice, dried thyme, paprika, and cayenne pepper, mixing well.
  11. Pour in the coconut milk and lime juice, stirring to combine.
  12. Let the sauce simmer for 3-4 minutes until slightly thickened.
  13. Add the cooked fettuccine to the skillet, tossing to coat the pasta with the sauce.
  14. Adjust seasoning with additional salt and black pepper if needed.
  15. Stir in the chopped green onions.
  16. Garnish with fresh parsley before serving.
