Description

A vibrant and refreshing seafood salad inspired by the flavors of the Italian seaside, featuring octopus, shrimp, and squid in a citrus dressing.


Ingredients

  • 1.5 lbs Octopus (tenderized by boiling)
  • 8 large Shrimp (peeled and deveined)
  • 4 tubes Squid (cut into rings)
  • 1 rib Celery
  • 2 bay leaves
  • 2 Lemons
  • 3 Tangerines
  • 3 cloves Garlic
  • ¼ cup Olive oil
  • 2 tsp Honey Dijon mustard
  • ¼ cup Fresh parsley
  • Salt and pepper to taste


Instructions

  1. Begin by boiling water in a large pot with salt and bay leaves.
  2. Once boiling, add the octopus and reduce to a simmer for about 45 minutes, or until tender.
  3. In the meantime, prepare the shrimp and squid; peel and devein the shrimp, then cut the squid into rings.
  4. After cooking, remove the octopus from the pot and let it cool before cutting into bite-sized pieces.
  5. In a separate bowl, zest and juice the lemons. Do the same with the tangerines.
  6. In a mixing bowl, combine the citrus juices with minced garlic, olive oil, and honey Dijon mustard. Whisk until well blended.
  7. Toss the octopus, shrimp, and squid in the dressing, ensuring everything is well coated.
  8. Add the chopped celery and parsley, then season with salt and pepper to taste.
  9. Serve chilled or at room temperature.

Notes

For best results, use the freshest seafood available. Chilling the salad for at least 30 minutes allows flavors to meld beautifully.
