Description
A vibrant and refreshing seafood salad inspired by the flavors of the Italian seaside, featuring octopus, shrimp, and squid in a citrus dressing.
Ingredients
- 1.5 lbs Octopus (tenderized by boiling)
- 8 large Shrimp (peeled and deveined)
- 4 tubes Squid (cut into rings)
- 1 rib Celery
- 2 bay leaves
- 2 Lemons
- 3 Tangerines
- 3 cloves Garlic
- ¼ cup Olive oil
- 2 tsp Honey Dijon mustard
- ¼ cup Fresh parsley
- Salt and pepper to taste
Instructions
- Begin by boiling water in a large pot with salt and bay leaves.
- Once boiling, add the octopus and reduce to a simmer for about 45 minutes, or until tender.
- In the meantime, prepare the shrimp and squid; peel and devein the shrimp, then cut the squid into rings.
- After cooking, remove the octopus from the pot and let it cool before cutting into bite-sized pieces.
- In a separate bowl, zest and juice the lemons. Do the same with the tangerines.
- In a mixing bowl, combine the citrus juices with minced garlic, olive oil, and honey Dijon mustard. Whisk until well blended.
- Toss the octopus, shrimp, and squid in the dressing, ensuring everything is well coated.
- Add the chopped celery and parsley, then season with salt and pepper to taste.
- Serve chilled or at room temperature.
Notes
For best results, use the freshest seafood available. Chilling the salad for at least 30 minutes allows flavors to meld beautifully.
