Ingredients

  • Olive oil, 2 tablespoons (30 ml) (30 milliliters)
  • Paprika, 1 tablespoon (15 ml) (15 grams)
  • Garlic powder, 1 teaspoon (5 ml) (5 grams)
  • Onion powder, 1 teaspoon (5 ml) (5 grams)
  • Dried oregano, 1 teaspoon (5 ml) (5 grams)
  • Dried thyme, 1 teaspoon (5 ml) (5 grams)
  • Cayenne pepper, 1/2 teaspoon (3 ml) (2.5 grams)
  • Salt, 1/2 teaspoon (3 ml) (2.5 grams)
  • Black pepper, 1/2 teaspoon (3 ml) (2.5 grams)
  • Corn tortillas, 8 pieces
  • Green cabbage, 2 cups (480 ml) shredded (180 grams)
  • Carrot, 1 large, shredded (100 grams)
  • Red onion, 1/4 cup (60 ml), thinly sliced (40 grams)
  • Lime juice, 2 tablespoons (30 ml) (30 milliliters)
  • Mayonnaise, 1/3 cup (80 ml) (80 milliliters)
  • Honey, 1 tablespoon (15 ml) (15 milliliters)
  • Cilantro, 1/4 cup (60 ml) chopped (15 grams)
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, salt, and black pepper.
  3. Pat the salmon fillets dry with paper towels.
  4. Rub the salmon fillets with olive oil.
  5. Coat both sides of the salmon fillets with the spice mixture.
  6. Place the salmon fillets on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 12-15 minutes until cooked through.
  8. While the salmon is baking, prepare the slaw by combining shredded green cabbage, shredded carrot, and sliced red onion in a large bowl.
  9. In a separate bowl, whisk together lime juice, mayonnaise, honey, and chopped cilantro.
  10. Pour the dressing over the cabbage mixture and toss to combine.
  11. Season the slaw with salt and black pepper to taste.
  12. Once the salmon is cooked, remove it from the oven and let it rest for a few minutes.

  14. Warm the corn tortillas in a dry skillet over medium heat or wrap them in a damp paper towel and microwave for 30 seconds.
