Ingredients
- Salmon fillets, 1 pound (454 g) (450 grams)
- Olive oil, 2 tablespoons (30 ml) (30 milliliters)
- Paprika, 1 tablespoon (15 ml) (15 grams)
- Garlic powder, 1 teaspoon (5 ml) (5 grams)
- Onion powder, 1 teaspoon (5 ml) (5 grams)
- Dried oregano, 1 teaspoon (5 ml) (5 grams)
- Dried thyme, 1 teaspoon (5 ml) (5 grams)
- Cayenne pepper, 1/2 teaspoon (3 ml) (2.5 grams)
- Salt, 1/2 teaspoon (3 ml) (2.5 grams)
- Black pepper, 1/2 teaspoon (3 ml) (2.5 grams)
- Corn tortillas, 8 pieces
- Green cabbage, 2 cups (480 ml) shredded (180 grams)
- Carrot, 1 large, shredded (100 grams)
- Red onion, 1/4 cup (60 ml), thinly sliced (40 grams)
- Lime juice, 2 tablespoons (30 ml) (30 milliliters)
- Mayonnaise, 1/3 cup (80 ml) (80 milliliters)
- Honey, 1 tablespoon (15 ml) (15 milliliters)
- Cilantro, 1/4 cup (60 ml) chopped (15 grams)
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, salt, and black pepper.
- Pat the salmon fillets dry with paper towels.
- Rub the salmon fillets with olive oil.
- Coat both sides of the salmon fillets with the spice mixture.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 12-15 minutes until cooked through.
- While the salmon is baking, prepare the slaw by combining shredded green cabbage, shredded carrot, and sliced red onion in a large bowl.
- In a separate bowl, whisk together lime juice, mayonnaise, honey, and chopped cilantro.
- Pour the dressing over the cabbage mixture and toss to combine.
- Season the slaw with salt and black pepper to taste.
- Once the salmon is cooked, remove it from the oven and let it rest for a few minutes.
- Flake the salmon into bite-sized pieces using a fork.
- Warm the corn tortillas in a dry skillet over medium heat or wrap them in a damp paper towel and microwave for 30 seconds.
- Assemble the tacos by placing flaked salmon onto each tortilla.
- Top the salmon with a generous amount of slaw.
