Ingredients

  • 4 (6-ounce) salmon fillets
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Lemon wedges for serving


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil. Sauté the minced garlic for about 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  4. In a baking dish, place the salmon fillets skin-side down. Season with salt, pepper, and dried oregano.
  5. Spoon the sautéed spinach evenly over each salmon fillet.
