Ingredients
- 1/4 cup honey
- 2 tablespoons olive oil
- 3 cloves minced garlic
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley (for garnish)
- Optional: garlicky quinoa or fresh arugula salad
Instructions
- Preheat the oven to 400°F (200°C).
- Combine honey, olive oil, garlic, paprika, salt, pepper, and lemon juice in a mixing bowl.
- Whisk the mixture until well blended.
- Place the cod fillet in a baking dish and pour the marinade over it, ensuring it is evenly coated.
- Allow the cod to marinate for 15-20 minutes.
- Bake the marinated cod in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
