Description

A delightful baked cod recipe marinated in honey, garlic, and lemon, ready in just 30 minutes.

Ingredients

  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 3 cloves minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley (for garnish)
  • Optional: garlicky quinoa or fresh arugula salad

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine honey, olive oil, garlic, paprika, salt, pepper, and lemon juice in a mixing bowl.
  3. Whisk the mixture until well blended.
  4. Place the cod fillet in a baking dish and pour the marinade over it, ensuring it is evenly coated.
  5. Allow the cod to marinate for 15-20 minutes.
  6. Bake the marinated cod in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
  7. Remove from the oven and garnish with fresh parsley before serving.

Notes

Try marinating the fish overnight for more intense flavors. Adding vegetables like bell peppers can enhance the dish.
