Ingredients
- 1/4 cup honey (substitutes: maple syrup or agave nectar)
- 2 tablespoons olive oil (or neutral oil)
- 3 cloves minced garlic (or 1/4 teaspoon garlic powder)
- 1 teaspoon paprika (smoked paprika for extra depth)
- 1 teaspoon salt (sea salt or kosher salt)
- 1/2 teaspoon pepper (freshly ground black pepper)
- 1 tablespoon lemon juice (fresh lemon juice ideal)
- 2 tablespoons fresh parsley (for garnish)
- Optional side dishes: Garlicky quinoa or fresh arugula salad
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish.
- Whisk together honey, olive oil, minced garlic, paprika, salt, pepper, and lemon juice in a small bowl.
- Coat the cod fillets with the marinade and let them sit for a short time.
- Place the marinated cod in a baking dish and pour any remaining marinade over the top.
- Bake in the oven for 15-20 minutes, or until the fish flakes easily with a fork.
- Garnish with fresh parsley before serving and enjoy.
