Ingredients

  • 1 cup water (240 ml)
  • 2/3 cup white sugar (160 ml)
  • 1/2 cup walnuts (60 g)
  • 4 large egg whites
  • 2/3 cup glutinous rice flour (mochiko) (80 g)
  • 1 cup vegetable oil for frying (240 ml)
  • 1 pound large shrimp, peeled and deveined (450 g)
  • 1/4 cup mayonnaise (60 ml)
  • 2 tablespoons (30 ml) honey
  • 1 tablespoon (15 ml) sweetened condensed milk


Instructions

  1. Collect all the necessary ingredients.
  2. Combine the water and sugar in a small pot and place it over high heat. Once it begins to boil, add the walnuts. Let them cook for 2 minutes, then strain and lay the walnuts on a baking sheet to dry.
  3. In a medium mixing bowl, beat the egg whites until they become frothy. Gradually incorporate the mochiko until the mixture becomes thick and sticky.
  4. Warm the oil in a deep, heavy pan over medium-high heat. Coat the shrimp in the mochiko mixture, then fry them in batches in the hot oil until they turn golden brown, approximately 5 minutes.
  5. Use a slotted spoon to take them out and let them drain on paper towels.
  6. In a medium serving bowl, mix the mayonnaise, honey, and sweetened condensed milk until well combined.
  7. Introduce the fried shrimp to the bowl, ensuring they are well coated in the sauce. Scatter the candied walnuts on top and present the dish.
