A delightful salmon dish topped with a sweet and tangy honey pineapple glaze, perfect for summer evenings.
Ingredients
- 4 salmon fillets (about 5 oz each)
- Salt and black pepper to taste
- 1 tablespoon olive oil
- ½ cup fresh pineapple chunks (or canned, drained)
- 3 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon fresh lime juice
- 1 clove garlic (minced)
- ½ teaspoon grated ginger
- Optional: 1 teaspoon sriracha (for a spicy kick)
- Fresh cilantro (chopped, for garnish)
- Lime wedges (for serving)
Instructions
- Season the salmon fillets with salt and pepper. Set aside.
- In a small saucepan, combine the pineapple chunks, honey, soy sauce, lime juice, garlic, ginger, and sriracha (if using).
- Simmer over medium heat for 5–7 minutes or until the sauce thickens slightly and the pineapple begins to caramelize.
- Heat olive oil in a skillet over medium-high heat. Add the salmon, skin-side down if applicable, and cook for 4–5 minutes.
- Flip the salmon and brush generously with the pineapple honey glaze. Cook for another 3–4 minutes, basting as needed, until the salmon is cooked through and flaky.
- Spoon extra glaze and pineapple over the top, garnish with fresh cilantro and lime wedges, and serve immediately.
Notes
For best results, use fresh ingredients and allow the glaze to thicken properly for optimal flavor.
