A vibrant dish that combines marinated shrimp, fluffy rice, and creamy avocado for a refreshing summer meal.
Ingredients
- 1 pound shrimp (peeled and deveined)
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 1 garlic clove (minced)
- ½ teaspoon chili powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 cups cooked jasmine or basmati rice
- 1 tablespoon rice vinegar
- ½ teaspoon salt
- 2 ripe avocados (diced)
- 1 tablespoon lime juice
- ¼ teaspoon salt
- Chopped cilantro
- Extra lime wedges
- Sesame seeds
Instructions
- Whisk together honey, lime juice, olive oil, garlic, chili powder, salt, and pepper in a bowl.
- Add the shrimp and toss to coat. Marinate for 10–15 minutes.
- Season the cooked rice with rice vinegar and ½ teaspoon salt.
- Toss the diced avocado with lime juice and ¼ teaspoon salt in a separate bowl.
- Heat a skillet over medium-high heat. Cook the marinated shrimp for 2–3 minutes per side or until pink and cooked through.
- Remove from heat and set aside.
- Use a food ring mold or clean can to layer seasoned rice, avocado, and cooked shrimp.
- Garnish with cilantro, sesame seeds, or lime juice.
Notes
For the best flavor, allow the shrimp to marinate for at least 10 minutes. Use ripe avocados for the best texture.
