Description

A vibrant dish that combines marinated shrimp, fluffy rice, and creamy avocado for a refreshing summer meal.


Ingredients

  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 garlic clove (minced)
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked jasmine or basmati rice
  • 1 tablespoon rice vinegar
  • ½ teaspoon salt
  • 2 ripe avocados (diced)
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • Chopped cilantro
  • Extra lime wedges
  • Sesame seeds


Instructions

  1. Whisk together honey, lime juice, olive oil, garlic, chili powder, salt, and pepper in a bowl.
  2. Add the shrimp and toss to coat. Marinate for 10–15 minutes.
  3. Season the cooked rice with rice vinegar and ½ teaspoon salt.
  4. Toss the diced avocado with lime juice and ¼ teaspoon salt in a separate bowl.
  5. Heat a skillet over medium-high heat. Cook the marinated shrimp for 2–3 minutes per side or until pink and cooked through.
  6. Remove from heat and set aside.
  7. Use a food ring mold or clean can to layer seasoned rice, avocado, and cooked shrimp.
  8. Garnish with cilantro, sesame seeds, or lime juice.

Notes

For the best flavor, allow the shrimp to marinate for at least 10 minutes. Use ripe avocados for the best texture.
