Ingredients

  • 2 tablespoon s olive oil (30 ml)
  • 1 pound large shrimp, peeled and deveined (450 g)
  • 3 tablespoon s honey (45 ml)
  • 3 cloves garlic, minced
  • 2 tablespoon s soy sauce (30 ml)
  • 1 tablespoon sesame oil (15 ml)
  • 3 cup (720 ml) s cooked white rice (about 600 g)
  • 1 cup frozen peas and carrots (150 g)
  • 1/2 cup green onions, sliced (50 g)
  • 6 large bell peppers, tops removed and seeds removed
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  3. Add the shrimp to the skillet and cook for about 2-3 minutes on each side until pink and opaque.
  4. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the remaining 1 tablespoon of olive oil.
  6. Add the minced garlic and sauté for about 30 seconds until fragrant.
  7. Stir in the honey, soy sauce, and sesame oil.
  8. Add the cooked shrimp back to the skillet and toss to coat with the sauce. Remove from heat.
  9. In a large bowl, combine the cooked white rice, peas and carrots, and green onions.
  10. Stir in the shrimp and sauce mixture until well combined.
  11. Season with salt and black pepper to taste.
  12. Stuff each bell pepper with the shrimp fried rice mixture.
  13. Place the stuffed bell peppers upright in a baking dish.
  14. Cover the dish with aluminum foil.
  15. Bake in the preheated oven for 25-30 minutes until the peppers are tender.
  16. Remove from the oven and let cool slightly before serving.
