Ingredients
- 2 tablespoon s olive oil (30 ml)
- 1 pound large shrimp, peeled and deveined (450 g)
- 3 tablespoon s honey (45 ml)
- 3 cloves garlic, minced
- 2 tablespoon s soy sauce (30 ml)
- 1 tablespoon sesame oil (15 ml)
- 3 cup (720 ml) s cooked white rice (about 600 g)
- 1 cup frozen peas and carrots (150 g)
- 1/2 cup green onions, sliced (50 g)
- 6 large bell peppers, tops removed and seeds removed
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the shrimp to the skillet and cook for about 2-3 minutes on each side until pink and opaque.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the honey, soy sauce, and sesame oil.
- Add the cooked shrimp back to the skillet and toss to coat with the sauce. Remove from heat.
- In a large bowl, combine the cooked white rice, peas and carrots, and green onions.
- Stir in the shrimp and sauce mixture until well combined.
- Season with salt and black pepper to taste.
- Stuff each bell pepper with the shrimp fried rice mixture.
- Place the stuffed bell peppers upright in a baking dish.
- Cover the dish with aluminum foil.
- Bake in the preheated oven for 25-30 minutes until the peppers are tender.
- Remove from the oven and let cool slightly before serving.
