Ingredients

  • – 2 pounds (900g) shrimp, shell off, tail on
  • – 1/4 cup (60ml) soy sauce
  • – 3 tablespoons (45 ml) honey
  • – 4 cloves garlic, minced or grated
  • – 2 tablespoons (30 ml) gochujang
  • – 1 tablespoon (15 ml) toasted sesame oil
  • – juice of half a lemon
  • – 2 tablespoons (30 ml) vegetable oil
  • – 1/3 cup (80ml) fresh orange juice
  • – 1/4 cup (60ml) fresh lemon juice
  • – 1/4 cup (15g) fresh cilantro, roughly chopped
  • – 1 fresno pepper, sliced


Instructions

  1. In a large resealable plastic bag, mix together the soy sauce, honey, garlic, gochujang, sesame oil, and lemon juice. Place the shrimp inside, seal the bag, and shake until the shrimp is well covered. You may choose to let the shrimp marinate for up to a day, but it’s not necessary.
  2. For the citrus butter, combine butter, orange juice, and lemon juice in a small saucepan. Heat on medium until the mixture is melted and smooth. Take off the heat and mix in the cilantro and fresno pepper.
  3. Heat up a grill or a grill pan to a high temperature.
  4. Skewer 4 to 5 shrimp on each stick and grill them for approximately 2 minutes on each side, or until the shrimp are fully cooked.
  5. Place the skewers on a serving dish and drizzle them with the citrus butter. Sprinkle with sesame seeds and cilantro before serving. Enjoy!

Notes

  • For a spicier kick, increase the gochujang in the marinade or add red pepper flakes to the shrimp before grilling.
  • For a sweeter flavor, add more honey to the marinade or drizzle extra honey on the shrimp skewers before serving.
  • Enhance the citrus flavor by squeezing lemon juice over the grilled shrimp skewers before drizzling with citrus butter.
