Description

Flavorful tacos with juicy prawns coated in smoky chipotle seasoning, layered with refreshing mango cucumber salsa.


Ingredients

  • 450g (1 lb) prawns, shells removed
  • 2 tablespoons honey
  • 2 teaspoons chipotle seasoning
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Olive oil, for cooking
  • 1 cup mango, chopped
  • 1 cup cucumber, chopped
  • 1 cup capsicum, diced
  • 1/4 cup red onion, diced
  • 1/2 cup coriander (cilantro) leaves, chopped
  • Juice of 1 lime


Instructions

  1. In a large bowl, combine the chopped mango, cucumber, capsicum, red onion, coriander leaves, and lime juice. Toss thoroughly and set aside.
  2. Heat a pan over medium-high heat and drizzle in some olive oil.
  3. Season the prawns with chipotle seasoning, garlic powder, and salt, ensuring they are evenly coated.
  4. Add the seasoned prawns to the hot pan, cooking for 1-2 minutes on each side until opaque.
  5. Warm the tortillas in the microwave or on a griddle pan.
  6. Assemble the tacos by layering mango salsa and topping with honey chipotle prawns. Garnish with fresh coriander leaves. Serve immediately.

Notes

Taste your salsa before serving and adjust lime juice or salt as needed. Try marinating the shrimp for deeper flavor.
