Description

Delicious homemade shrimp egg rolls stuffed with plump shrimp and crunchy vegetables, perfect for gatherings or cozy nights in.


Ingredients

  • 1 cup plump shrimp, peeled and deveined
  • 1 cup assorted crunchy vegetables (like cabbage, carrots, and bell peppers), finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Wonton wrappers
  • Oil for frying
  • Sweet chili sauce or soy sauce for serving


Instructions

  1. Heat a little oil in a skillet over medium heat, then sauté garlic and ginger until fragrant.
  2. Add the shrimp and cook until pink; then add the chopped vegetables, soy sauce, and sesame oil. Cook until the veggies are tender.
  3. Remove from heat and let the mixture cool.
  4. Lay out a wonton wrapper and place a spoonful of the shrimp mixture in the center.
  5. Fold the wrapper over the filling, sealing the edges with a bit of water.
  6. Heat oil in a deep pan and fry the rolls until golden brown.
  7. Drain on paper towels and serve with sweet chili sauce or soy sauce.

Notes

Experiment with fillings by adding green onions, sesame seeds, or diced jalapeños for a spicy kick.
