Delicious homemade shrimp egg rolls stuffed with plump shrimp and crunchy vegetables, perfect for gatherings or cozy nights in.
Ingredients
- 1 cup plump shrimp, peeled and deveined
- 1 cup assorted crunchy vegetables (like cabbage, carrots, and bell peppers), finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- Wonton wrappers
- Oil for frying
- Sweet chili sauce or soy sauce for serving
Instructions
- Heat a little oil in a skillet over medium heat, then sauté garlic and ginger until fragrant.
- Add the shrimp and cook until pink; then add the chopped vegetables, soy sauce, and sesame oil. Cook until the veggies are tender.
- Remove from heat and let the mixture cool.
- Lay out a wonton wrapper and place a spoonful of the shrimp mixture in the center.
- Fold the wrapper over the filling, sealing the edges with a bit of water.
- Heat oil in a deep pan and fry the rolls until golden brown.
- Drain on paper towels and serve with sweet chili sauce or soy sauce.

Experiment with fillings by adding green onions, sesame seeds, or diced jalapeños for a spicy kick.
