  • 1 lb (450 g) imitation crab meat
  • 2 tbsp (30 g) vegetable oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup (240 ml) coconut cream
  • 2 cups (480 ml) vegetable or fish stock
  • 1/2 cup (120 ml) tomato puree
  • 1 tsp (5 g) paprika
  • 1 tsp (5 g) cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp (30 ml) olive oil
  • 1/4 cup (30 g) all-purpose flour
  • 1/4 cup (60 ml) water
  • Fresh parsley, chopped for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and cook for 1 minute.
  4. Add the butter to the pot and let it melt.
  5. Sprinkle the flour over the onions and garlic, stirring constantly to form a roux.
  6. Gradually whisk in the seafood or fish stock until smooth.
  7. Add the tomato puree, paprika, and cayenne pepper; stir to combine.
  8. Bring the mixture to a simmer and cook for 5 minutes.
  9. Add the shrimp to the pot and cook until they turn pink, about 3-4 minutes.
  10. Stir in the crab meat and cook for another 2 minutes.
  11. Pour in the heavy cream and stir to combine.
  12. Season with salt and black pepper to taste.
  13. In a small bowl, mix water with any leftover flour and add to the pot if thicker consistency is desired.
  14. Let the bisque simmer for an additional 10 minutes, stirring occasionally.
  15. Remove from heat and let it cool slightly.
  16. Use an immersion blender to puree the soup until smooth, if desired.
  17. Serve hot, garnished with chopped fresh parsley.
