- 2 cups (480 ml) vegetable or fish stock
- 1/2 cup (120 ml) tomato puree
- 1 tsp (5 g) paprika
- 1 tsp (5 g) cayenne pepper
- Salt to taste
- Black pepper to taste
- 2 tbsp (30 ml) olive oil
- 1/4 cup (30 g) all-purpose flour
- 1/4 cup (60 ml) water
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and cook for 1 minute.
- Add the butter to the pot and let it melt.
- Sprinkle the flour over the onions and garlic, stirring constantly to form a roux.
- Gradually whisk in the seafood or fish stock until smooth.
- Add the tomato puree, paprika, and cayenne pepper; stir to combine.
- Bring the mixture to a simmer and cook for 5 minutes.
- Add the shrimp to the pot and cook until they turn pink, about 3-4 minutes.
- Stir in the crab meat and cook for another 2 minutes.
- Pour in the heavy cream and stir to combine.
- Season with salt and black pepper to taste.
- In a small bowl, mix water with any leftover flour and add to the pot if thicker consistency is desired.
- Let the bisque simmer for an additional 10 minutes, stirring occasionally.
- Remove from heat and let it cool slightly.
- Use an immersion blender to puree the soup until smooth, if desired.
- Serve hot, garnished with chopped fresh parsley.
