Ingredients

  • – 3 tbsp. vegetable oil (45 ml)
  • – 1 small yellow onion, finely diced
  • – 2 celery ribs, finely diced
  • – 2 garlic cloves, finely minced
  • – 1/4 cup flour (30 g)
  • – 2 tbsp. tomato paste (30 ml)
  • – 1 1/2 tsp (8 ml). Old Bay seasoning
  • – 1/2 tsp (3 ml). salt, plus more to taste
  • – 4 cups fish stock or vegetable broth (960 ml)
  • – 2 bay leaves
  • – 1 cup coconut milk (240 ml)
  • – 1/2 lemon, juice
  • – 1 lb. imitation crabmeat, divided (450 g)
  • – Fresh parsley, finely chopped


Instructions

  1. Heat vegetable oil in a large pot on medium heat until hot. Add the diced onion and celery, cooking them for 3-4 minutes or until the onion is see-through. Add the minced garlic and sauté for another 30 seconds until you can smell its aroma.
  2. Incorporate the flour, tomato paste, Old Bay seasoning, and salt into the pot. Stir occasionally and cook for 2-3 minutes.
  3. Pour the fish stock or vegetable broth into the mixture and add the bay leaves. Increase the heat to high until it boils, then lower the heat. Cover the pot and let it simmer gently for 15-20 minutes.
  4. Remove the bay leaves and add the coconut milk and lemon juice to the pot. Blend the mixture until it’s smooth using an immersion blender, or transfer carefully to a blender or food processor.
  5. After achieving a creamy consistency, mix in half of the imitation crabmeat. Serve the bisque right away, garnishing with the remaining crabmeat and a sprinkle of chopped fresh parsley.
