Ingredients

  • 2 salmon fillets (170g each)
  • 1 pound Brussels sprouts, trimmed and halved (450g)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon salt (5g)
  • 1/2 teaspoon black pepper (1g)
  • 2 teaspoons dried thyme (5g)
  • 2 teaspoons dried rosemary (5g)
  • 1 tablespoon lemon juice (15ml)
  • 2 cloves garlic, minced


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Place the Brussels sprouts in a large bowl.
  4. Add 1 tablespoon of olive oil to the Brussels sprouts.
  5. Sprinkle 1/2 teaspoon of salt and 1/4 teaspoon of black pepper over the Brussels sprouts.
  6. Add 1 teaspoon of dried thyme and 1 teaspoon of dried rosemary to the Brussels sprouts.
  7. Toss the Brussels sprouts to coat them evenly with the oil and seasonings.
  8. Spread the Brussels sprouts in a single layer on one side of the baking sheet.
  9. Pat the salmon fillets dry with paper towels.
  10. Place the salmon fillets on the other side of the baking sheet.
  11. Drizzle 1 tablespoon of olive oil over the salmon fillets.
  12. Sprinkle 1/2 teaspoon of salt and 1/4 teaspoon of black pepper over the salmon.
  13. Rub the minced garlic evenly over the salmon fillets.
  14. Sprinkle 1 teaspoon of dried thyme and 1 teaspoon of dried rosemary over the salmon.
  15. Drizzle the lemon juice evenly over the salmon fillets.
  16. Place the baking sheet in the preheated oven.
  17. Roast for 15-20 minutes, until the salmon is cooked through and Brussels sprouts are tender.
  18. Remove from the oven and let it rest for a few minutes before serving.
  19. Serve the salmon fillets with the roasted Brussels sprouts on the side.
