Ingredients
- 2 salmon fillets (170g each)
- 1 pound Brussels sprouts, trimmed and halved (450g)
- 2 tablespoons olive oil (30ml)
- 1 teaspoon salt (5g)
- 1/2 teaspoon black pepper (1g)
- 2 teaspoons dried thyme (5g)
- 2 teaspoons dried rosemary (5g)
- 1 tablespoon lemon juice (15ml)
- 2 cloves garlic, minced
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Place the Brussels sprouts in a large bowl.
- Add 1 tablespoon of olive oil to the Brussels sprouts.
- Sprinkle 1/2 teaspoon of salt and 1/4 teaspoon of black pepper over the Brussels sprouts.
- Add 1 teaspoon of dried thyme and 1 teaspoon of dried rosemary to the Brussels sprouts.
- Toss the Brussels sprouts to coat them evenly with the oil and seasonings.
- Spread the Brussels sprouts in a single layer on one side of the baking sheet.
- Pat the salmon fillets dry with paper towels.
- Place the salmon fillets on the other side of the baking sheet.
- Drizzle 1 tablespoon of olive oil over the salmon fillets.
- Sprinkle 1/2 teaspoon of salt and 1/4 teaspoon of black pepper over the salmon.
- Rub the minced garlic evenly over the salmon fillets.
- Sprinkle 1 teaspoon of dried thyme and 1 teaspoon of dried rosemary over the salmon.
- Drizzle the lemon juice evenly over the salmon fillets.
- Place the baking sheet in the preheated oven.
- Roast for 15-20 minutes, until the salmon is cooked through and Brussels sprouts are tender.
- Remove from the oven and let it rest for a few minutes before serving.
- Serve the salmon fillets with the roasted Brussels sprouts on the side.
