Ingredients

  • Salmon fillets, 4 pieces
  • Salt, 1 teaspoon (5 ml) (5 grams)

  • Fresh parsley, 1/4 cup (60 ml) chopped (15 grams)
  • Fresh dill, 1/4 cup (60 ml) chopped (15 grams)
  • Fresh thyme, 2 tablespoons (30 ml) chopped (6 grams)
  • Olive oil, 2 tablespoons (30 ml) (30 milliliters)
  • Fresh cranberries, 1 cup (240 ml) (100 grams)
  • Beef sausage, 1/4 cup (60 ml) finely chopped (40 grams)
  • Bell pepper, 1 small, seeded and chopped
  • Lime juice, 2 tablespoons (30 ml) (30 milliliters)
  • Maple syrup, 1 tablespoon (15 ml) (15 milliliters)
  • Salt, 1/4 teaspoon (1 ml) (1 gram)
  • Cilantro, 2 tablespoons (30 ml) chopped (8 grams)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the salmon fillets dry with paper towels.
  3. Season the salmon with 1 teaspoon salt and 1/2 teaspoon black pepper.
  4. In a bowl, combine fresh parsley, dill, thyme, and olive oil.
  5. Spread the herb mixture evenly over the top of each salmon fillet.
  6. Place the salmon fillets on a baking sheet lined with parchment paper.
  7. Bake the salmon in the preheated oven for 12-15 minutes, until cooked through.
  8. While the salmon is baking, prepare the cranberry salsa.
  9. In a bowl, combine fresh cranberries, red onion, jalapeño, lime juice, honey, and 1/4 teaspoon salt.
  10. Add chopped cilantro to the cranberry salsa and mix well.
  11. Once the salmon is cooked, remove it from the oven and let it rest for 2 minutes.
  12. Serve the herb-crusted salmon with a generous spoonful of cranberry salsa on top.
