Description

Ingredients

  • Shrimp: 1 pound, peeled and deveined
  • Cucumber: 2 cups, diced
  • Green Onion: 1/4 cup, chopped
  • Fresh Herbs: 1/4 cup, chopped (parsley or cilantro)
  • Greek Yogurt: 1/2 cup
  • Lime Juice: 2 tablespoons
  • Salt and Pepper: to taste


Instructions

  1. In a bowl, combine the diced cucumber, chopped green onion, and fresh herbs.
  2. In another bowl, mix the Greek yogurt and lime juice together to create the dressing. Add salt and pepper to taste.
  3. Cook the shrimp in a pan over medium heat until they turn pink and are cooked through, about 2-3 minutes per side.
  4. Let the shrimp cool slightly before adding to the cucumber mixture.
  5. Gently fold in the dressing until everything is combined.
  6. Serve chilled.
