Ingredients
- 1 pound dry scallops
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- Salt, to taste
- Pepper, to taste
- Fresh herbs (optional), for garnish
Instructions
- Pat the scallops dry and season with salt and pepper.
- Heat a cast iron skillet over medium-high heat and add olive oil.
- Once the oil is shimmering, add the scallops to the pan.
- Sear for about 2-3 minutes on each side until golden brown.
- In the last minute of cooking, add butter and garlic to the pan, spooning the melted butter over the scallops.
- Remove from heat, drizzle with lemon juice, and garnish with fresh herbs if desired. Serve immediately.
