Ingredients
- 1 head garlic
- 4 tbsp (60 ml) unsalted butter
- 1 lb (450 g) frozen large deveined, shell-on shrimp, thawed
- 2 tbsp (30 ml) rice flour
- 1 tbsp (15 ml) paprika
- 5 tsp (8 ml) kosher salt
- 1 tsp (5 ml) cayenne pepper
- 2 tbsp (30 ml) olive oil
Instructions
- Separate the garlic cloves and place them in a bowl. Cover with another bowl and shake gently for about 30 seconds until the peels come off. Chop the peeled garlic finely.
- In a sauté pan over medium heat, let the butter melt, then add the chopped garlic. Stir occasionally until it turns golden brown, about 2 to 3 minutes, then transfer it to a small dish and set it aside.
- Use paper towels to dry the thawed shrimp and place them in a large bowl.
- Mix the rice flour, paprika, salt, and cayenne pepper in a small dish. Sprinkle this mixture over the shrimp and toss with a spatula or large spoon until the shrimp are thoroughly coated.
- In a nonstick skillet, heat the olive oil over medium-high. Arrange the shrimp in a single layer and cook in batches, turning once, until each side is browned and just cooked through, about 2 to 3 minutes per side. Add some of the garlic butter to the skillet and cook for an additional 30 seconds. Repeat this process with the remaining shrimp and garlic butter. Serve right away.
Notes
- Thoroughly dry shrimp before coating for a crispy crust.
- Avoid overcrowding the skillet for even cooking.
- Adjust cayenne pepper for desired spice level, or omit for milder flavor.
