Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ cup pineapple juice (preferably fresh)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon ground ginger
  • 1 tablespoon lime juice
  • ¼ cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Optional garnish: Pineapple chunks, lime wedges, extra cilantro


Instructions

  1. Pat the shrimp dry and season with salt and pepper.
  2. Melt the butter and olive oil in a large skillet over medium heat, then sauté the garlic until fragrant.
  3. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque.
  4. Pour in the pineapple juice, soy sauce, honey (or brown sugar), ginger, and lime juice; simmer for 2 minutes.
  5. Remove from heat and stir in the fresh cilantro.
  6. Serve hot, garnished with pineapple chunks, lime wedges, and extra cilantro.

Notes

Use fresh ingredients for the best flavor; consider adding red pepper flakes for heat.
