Ingredients

  • – 450g (1 pound) halibut boneless skinless fillets (about 1.25cm thick)
  • – 120g (1 cup) flour
  • – 240ml (1 cup) chicken broth (if you are against using beef)
  • – 2 eggs
  • – 1/2 tsp (3 ml) baking powder
  • – 1/2 tsp (3 ml) salt
  • – 1/2 tsp (3 ml) pepper
  • – 120g (1 cup) all-purpose flour
  • – Corn tortillas softened
  • – Cabbage shredded
  • – Cilantro dressing from our Shrimp Taco recipe
  • – Pico de Gallo
  • – Lime wedges
  • – Cilantro sprigs for garnish

Instructions

  1. Combine the flour, chicken broth, eggs, baking powder, salt, and pepper, then whisk until you achieve a smooth consistency.
  2. Submerge the halibut fillets in the batter, removing any excess, and then coat them with all-purpose flour.
  3. Cook the coated fish in hot oil at 375°F for 6 to 7 minutes, or until they are golden and flake easily when cut. The internal temperature of the fish should reach approximately 145°F.
  4. Arrange the remaining ingredients on the softened corn tortillas and serve without delay.

Notes

  • – Opt for whole wheat flour instead of all-purpose for a lighter alternative.
  • – Try different fish fillets like cod or tilapia for a unique taste.
  • – Enhance your tacos with a dash of fresh lime juice for a zesty kick.
