Description

A comforting chowder made with haddock, fresh vegetables, and a creamy broth, reminiscent of cozy meals by the sea.


Ingredients

  • 1 pound haddock fillets
  • 4 cups fish stock or clam broth
  • 1 medium onion, diced
  • 2 stalks celery, chopped
  • 2 medium potatoes, diced
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Melt butter in a large pot over medium heat. Add the diced onion and chopped celery, cooking until softened.
  2. Add the diced potatoes and fish stock. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  3. Add the haddock fillets and cook for another 5-7 minutes until the fish is cooked through.
  4. Stir in the heavy cream and season with salt and pepper.
  5. Serve hot, garnished with fresh parsley.

Notes

For a creamier chowder, you can puree a portion of it before stirring in the fish. Pair with crusty bread for a delightful meal.
