Ingredients
- 1 pound haddock fillets
- 4 cups fish stock or clam broth
- 1 medium onion, diced
- 2 stalks celery, chopped
- 2 medium potatoes, diced
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Melt butter in a large pot over medium heat. Add the diced onion and chopped celery, cooking until softened.
- Add the diced potatoes and fish stock. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Add the haddock fillets and cook for another 5-7 minutes until the fish is cooked through.
- Stir in the heavy cream and season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
For a creamier chowder, you can puree a portion of it before stirring in the fish. Pair with crusty bread for a delightful meal.
