Description
A hearty and flavorful gumbo combining andouille sausage, shrimp, and vegetables, perfect for family gatherings.
Ingredients
- 1 lb andouille sausage, sliced
- 1 lb shrimp, peeled and deveined
- 1 can (14.5 oz) diced tomatoes
- 1 cup onion, chopped
- 1 cup bell pepper, chopped
- 1 cup celery, chopped
- 4 cups chicken stock
- 2 cups okra, sliced (optional)
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 4 cups cooked rice
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the sliced andouille sausage and cook until browned.
- Add the chopped onion, bell pepper, and celery. Sauté until the vegetables are tender.
- Stir in the diced tomatoes, chicken stock, Cajun seasoning, salt, and pepper. Bring to a simmer.
- Add the shrimp and okra (if using) to the pot. Cook until the shrimp are pink and cooked through, about 5 minutes.
- Serve the gumbo over a bed of cooked rice.
Notes
Use fresh ingredients whenever possible for the best flavor. You can substitute shrimp with crab or chicken if desired.
