Description

A hearty and flavorful gumbo combining andouille sausage, shrimp, and vegetables, perfect for family gatherings.


Ingredients

  • 1 lb andouille sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 1 cup celery, chopped
  • 4 cups chicken stock
  • 2 cups okra, sliced (optional)
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 4 cups cooked rice
  • 2 tablespoons vegetable oil


Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the sliced andouille sausage and cook until browned.
  2. Add the chopped onion, bell pepper, and celery. Sauté until the vegetables are tender.
  3. Stir in the diced tomatoes, chicken stock, Cajun seasoning, salt, and pepper. Bring to a simmer.
  4. Add the shrimp and okra (if using) to the pot. Cook until the shrimp are pink and cooked through, about 5 minutes.
  5. Serve the gumbo over a bed of cooked rice.

Notes

Use fresh ingredients whenever possible for the best flavor. You can substitute shrimp with crab or chicken if desired.
