Ingredients
- 454 g large raw shrimp, peeled and deveined (1 lb)
- 30 ml olive oil (2 tbsp)
- 5 g granulated garlic (1 tsp)
- 5 g smoked paprika (1 tsp)
- salt and pepper, to taste
- 4 (10 inch) low-carb flour tortillas
- 380 g chopped Romaine lettuce (2 cups)
- 110 g beef croutons, coarsely chopped (1 cup)
- 120 ml creamy Caesar yogurt dressing (1/2 cup)
Instructions
- Mix the shrimp with olive oil, smoked paprika, granulated garlic, salt, and pepper in a large bowl. Stir to ensure they are evenly coated; allow them to sit for 15 minutes.
- Heat up a grill or grill pan to high temperature. If you are using an outdoor grill, skewer the shrimp. Cook the shrimp until the exterior is bright pink and the inside is no longer translucent, about 2 to 3 minutes on each side; place them on a plate once done. Briefly heat the tortillas on the grill for approximately 10 to 15 seconds per side.
- Cut the shrimp into 1/2-inch pieces and transfer them to a large bowl. Combine with lettuce, croutons, and Caesar dressing. Evenly distribute the mixture down the center of each tortilla. Fold the sides of the tortillas inward and tightly roll from the bottom. Slice the wraps in half diagonally and serve.
