Ingredients
- 1 lb. (454 g) large shrimp, peeled and deveined
- 1 tablespoon (15 ml) olive oil
- 1 teaspoon (5 ml) paprika
- 1/2 teaspoon (3 ml) garlic powder
- 1/4 teaspoon (1 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 1/4 teaspoon (1 ml) chili powder (optional)
- 1 cup (240 ml) frozen corn, thawed
- 1/2 cup (120 g) red bell pepper, diced
- 1/4 cup (15 g) parsley, chopped
- 1 serrano pepper, seeded and minced (optional)
- 1 lime, juiced
- Salt to taste
- 1/2 cup (120 g) yogurt
- 1/4 cup (60 g) coconut cream
- 1 tablespoon (15 ml) parsley, chopped
- 1 tablespoon (15 ml) lime juice
- 1 clove garlic, minced
- 1/4 teaspoon (1 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 1 avocado, sliced (or mashed)
- Sesame seeds for garnish
- Green onions, chopped, for garnish
Instructions
- Prepare the Shrimp: In a mixing bowl, blend the shrimp with olive oil, paprika, garlic powder, salt, black pepper, and chili powder if desired. Stir until well-coated.
- Prepare the Corn Salsa: Mix together the corn, red bell pepper, serrano pepper (if using), parsley, lime juice, and salt in another bowl. Gently combine and set aside.
- Cook the Shrimp: Cook the shrimp on a grill over moderate heat for 2-3 minutes on each side, until they are fully cooked.
- Create the Creamy Sauce: In a smaller bowl, combine yogurt, coconut cream, parsley, lime juice, garlic, salt, and black pepper. Whisk until smooth.
- Put Together the Bowls: Evenly distribute the corn salsa into serving bowls, add the grilled shrimp on top, and include avocado slices or mash. Drizzle with the Creamy Garlic Sauce. Garnish with sesame seeds and chopped green onions.
