Ingredients

  • 1 lb. (454 g) large shrimp, peeled and deveined
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 ml) paprika
  • 1/2 teaspoon (3 ml) garlic powder
  • 1/4 teaspoon (1 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 1/4 teaspoon (1 ml) chili powder (optional)
  • 1 cup (240 ml) frozen corn, thawed
  • 1/2 cup (120 g) red bell pepper, diced
  • 1/4 cup (15 g) parsley, chopped
  • 1 serrano pepper, seeded and minced (optional)
  • 1 lime, juiced
  • Salt to taste
  • 1/2 cup (120 g) yogurt
  • 1/4 cup (60 g) coconut cream
  • 1 tablespoon (15 ml) parsley, chopped
  • 1 tablespoon (15 ml) lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon (1 ml) salt
  • 1/4 teaspoon (1 ml) black pepper
  • 1 avocado, sliced (or mashed)
  • Sesame seeds for garnish
  • Green onions, chopped, for garnish


Instructions

  1. Prepare the Shrimp: In a mixing bowl, blend the shrimp with olive oil, paprika, garlic powder, salt, black pepper, and chili powder if desired. Stir until well-coated.
  2. Prepare the Corn Salsa: Mix together the corn, red bell pepper, serrano pepper (if using), parsley, lime juice, and salt in another bowl. Gently combine and set aside.
  3. Cook the Shrimp: Cook the shrimp on a grill over moderate heat for 2-3 minutes on each side, until they are fully cooked.
  4. Create the Creamy Sauce: In a smaller bowl, combine yogurt, coconut cream, parsley, lime juice, garlic, salt, and black pepper. Whisk until smooth.
