Ingredients
- 1 lb (454 g) large or jumbo shrimp, peeled and deveined
- 1 bunch of asparagus, trimmed
- 2 tbsp (30 ml) vegetable oil (divided)
- 1 tsp (5 ml) paprika
- Salt and black pepper, to taste
- 1/2 cup (120 ml) Greek yogurt or dairy-free sour cream
- 1 garlic clove, finely minced
- 1 tbsp (15 ml) lemon juice
- Fresh parsley for garnish (optional)
Instructions
- In a mixing bowl, combine the shrimp with 1 tablespoon of vegetable oil, paprika, salt, and pepper. Allow the shrimp to marinate for 10–15 minutes.
- In a separate small bowl, blend the Greek yogurt (or dairy-free sour cream), minced garlic, lemon juice, 1 tablespoon vegetable oil, salt, and pepper until smooth. Refrigerate until needed.
- Coat the trimmed asparagus with vegetable oil, salt, and pepper. Cook on a grill or in a pan for 4–5 minutes until they are tender and slightly charred.
- Grill the shrimp over medium-high heat for 2–3 minutes on each side until they turn pink and are cooked through.
- To serve, spread a dollop of the creamy garlic sauce at the bottom of each serving bowl. Place the shrimp and asparagus on top.
- Optionally, sprinkle with chopped parsley and additional black pepper.
