Description

A delightful grilled shrimp bowl featuring fresh shrimp, creamy avocado, and vibrant corn salsa, perfect for family gatherings and summer evenings.

Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup corn, grilled or roasted
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, mix garlic, olive oil, lime juice, salt, and pepper. Add shrimp, ensuring every piece is coated well. Allow it to marinate for 15-30 minutes.
  2. While the shrimp marinates, prepare the corn; slice kernels off the cob once grilled and allow to cool.
  3. Preheat the grill to medium-high. Thread marinated shrimp onto skewers (about 4-5 shrimp per skewer).
  4. Place skewers on the grill and cook for 2-3 minutes on each side until shrimp turn pink and opaque.
  5. Assemble the bowl by adding grilled corn and diced avocado alongside the shrimp. Garnish with fresh cilantro.
  6. Drizzle with your favorite creamy sauce before serving.

Notes

For extra flavor, consider adding a splash of heat to the marinade, such as red pepper flakes or diced jalapeños.
