Description

A vibrant grilled shrimp bowl featuring fresh avocado, corn salsa, and a creamy garlic sauce, perfect for summer meals.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
  • 1 cup frozen corn, thawed
  • ½ cup red onion, diced
  • ¼ cup cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt to taste
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp cilantro, chopped
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 avocado, sliced or mashed
  • Sesame seeds for garnish
  • Green onions, chopped for garnish


Instructions

  1. In a bowl, toss the shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne (if using) until well coated.
  2. In another bowl, mix the thawed corn, diced red onion, jalapeño, cilantro, lime juice, and salt together. Set the salsa aside.
  3. Grill the shrimp over medium heat for 2-3 minutes per side until they turn pink and cook through.
  4. In a bowl, whisk together the mayonnaise, sour cream, cilantro, lemon juice, minced garlic, salt, and black pepper for the creamy sauce.
  5. To assemble your grilled shrimp bowl, layer the corn salsa, grilled shrimp, and avocado in serving bowls.
  6. Drizzle the creamy garlic sauce over the contents, then garnish with sesame seeds and chopped green onions.
  7. Serve immediately and enjoy!

Notes

For enhanced flavor, let the shrimp marinate in their seasoning for 30 minutes to an hour before grilling.
