Description

A delightful grilled shrimp bowl featuring marinated shrimp, fresh corn salsa, and a creamy garlic sauce, perfect for sharing.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
  • 1 cup frozen corn, thawed
  • ½ cup red onion, diced
  • ¼ cup cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt to taste
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp cilantro, chopped
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 avocado, sliced or mashed
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish


Instructions

  1. Toss shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne (if using). Let marinate for 15-30 minutes.
  2. In a bowl, mix thawed corn, red onion, minced jalapeño (optional), cilantro, lime juice, and salt to create the corn salsa.
  3. Preheat your grill over medium heat. Grill shrimp for about 2-3 minutes on each side until pink and opaque.
  4. In a small bowl, combine mayonnaise, sour cream, cilantro, lemon juice, minced garlic, salt, and pepper to create a creamy garlic sauce.
  5. Assemble your bowl starting with corn salsa at the base, followed by grilled shrimp and sliced avocado. Drizzle with creamy garlic sauce.

Notes

For a fun twist, consider adding fruits like diced mango or pineapple to the corn salsa.
