Description

A flavorful grilled shrimp bowl featuring tender shrimp, fresh asparagus, and a rich creamy garlic sauce, perfect for any season.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon lemon juice


Instructions

  1. In a bowl, combine the shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Marinate for 15-20 minutes.
  2. Preheat your grill or grill pan over medium-high heat.
  3. Drizzle trimmed asparagus with olive oil and season with salt and pepper, tossing to coat.
  4. Add the asparagus to the hot grill and cook for 4-5 minutes, turning occasionally until tender and slightly charred. Remove from the grill.
  5. Grill the marinated shrimp for 2-3 minutes on each side or until they turn pink and opaque.
  6. In a medium bowl, combine Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper for the creamy garlic sauce. Mix until smooth and adjust seasoning as needed.
  7. To assemble, start with quinoa or rice, layer on the grilled asparagus and shrimp, and drizzle with creamy garlic sauce. Garnish with fresh parsley.

Notes

For a smoky flavor, consider using a charcoal grill. If the sauce thickens too much, whisk in some water or more lemon juice.
