Ingredients
- 1 pound (454 g) large shrimp, peeled and deveined (450 grams)
- 2 tablespoon s olive oil (30 ml)
- 1 tablespoon lime juice (15 ml)
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) ground cumin (5 grams)
- 1 teaspoon (5 ml) smoked paprika (5 grams)
- Salt, to taste
- Black pepper, to taste
- 2 ripe avocados, peeled and diced
- 1/4 cup (60 ml) cilantro leaves, chopped (about 15 grams)
- 1 tablespoon lime juice (15 ml)
- Salt, to taste
- 4 large flour tortillas
- 1 cup (240 ml) romaine lettuce, shredded (about 50 grams)
- 1/2 cup (120 ml) cherry tomatoes, halved (about 75 grams)
- 1/4 cup (60 ml) red onion, thinly sliced (about 40 grams)
Instructions
- In a bowl, combine shrimp, olive oil, lime juice, garlic, cumin, smoked paprika, salt, and black pepper.
- Mix well to coat the shrimp evenly with the marinade.
- Let the shrimp marinate for 15-20 minutes in the refrigerator.
- Preheat a grill or grill pan over medium-high heat.
- Grill the shrimp for 2-3 minutes on each side until cooked through.
- Remove shrimp from the grill and set aside to cool slightly.
- In a separate bowl, combine diced avocados, cilantro, lime juice, and a pinch of salt.
- Gently mix the avocado mixture until well combined.
- Lay a flour tortilla flat on a clean surface.
- Place a portion of shredded romaine lettuce in the center of the tortilla.
- Add a few grilled shrimp on top of the lettuce.
- Spoon some avocado mixture over the shrimp.
- Add a few cherry tomato halves and slices of red onion.
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom.
- Repeat with the remaining tortillas and fillings.
- Serve the wraps immediately or wrap them in foil for later.
