Ingredients

  • 1 pound (454 g) large shrimp, peeled and deveined (450 grams)
  • 2 tablespoon s olive oil (30 ml)
  • 1 tablespoon lime juice (15 ml)
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) ground cumin (5 grams)
  • 1 teaspoon (5 ml) smoked paprika (5 grams)
  • Salt, to taste
  • Black pepper, to taste
  • 2 ripe avocados, peeled and diced
  • 1/4 cup (60 ml) cilantro leaves, chopped (about 15 grams)
  • 1 tablespoon lime juice (15 ml)
  • Salt, to taste
  • 4 large flour tortillas
  • 1 cup (240 ml) romaine lettuce, shredded (about 50 grams)
  • 1/2 cup (120 ml) cherry tomatoes, halved (about 75 grams)
  • 1/4 cup (60 ml) red onion, thinly sliced (about 40 grams)


Instructions

  1. In a bowl, combine shrimp, olive oil, lime juice, garlic, cumin, smoked paprika, salt, and black pepper.
  2. Mix well to coat the shrimp evenly with the marinade.
  3. Let the shrimp marinate for 15-20 minutes in the refrigerator.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Grill the shrimp for 2-3 minutes on each side until cooked through.
  6. Remove shrimp from the grill and set aside to cool slightly.
  7. In a separate bowl, combine diced avocados, cilantro, lime juice, and a pinch of salt.
  8. Gently mix the avocado mixture until well combined.
  9. Lay a flour tortilla flat on a clean surface.
  10. Place a portion of shredded romaine lettuce in the center of the tortilla.
  11. Add a few grilled shrimp on top of the lettuce.
  12. Spoon some avocado mixture over the shrimp.
  13. Add a few cherry tomato halves and slices of red onion.
  14. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom.
  15. Repeat with the remaining tortillas and fillings.
  16. Serve the wraps immediately or wrap them in foil for later.
