Ingredients

  • 1 pound (454 g) (450 grams) large shrimp, peeled and deveined
  • 1 pound (454 g) (450 grams) sea scallops
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 2 tablespoon (30 ml) s olive oil (30 milliliters)
  • 2 tablespoon (30 ml) s lemon juice (30 milliliters)
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) salt (5 grams)
  • 1/2 teaspoon (3 ml) black pepper (1 gram)
  • 1 teaspoon (5 ml) dried oregano (1 gram)
  • 1 tablespoon (15 ml) fresh parsley, chopped (15 grams)
  • Wooden or metal skewers


Instructions

  1. Soak wooden skewers in water for 30 minutes if using wooden skewers.
  2. In a large bowl, combine olive oil, lemon juice, minced garlic, salt, black pepper, and dried oregano.
  3. Add shrimp and scallops to the bowl and toss to coat thoroughly.
  4. Let the seafood marinate in the refrigerator for 15-20 minutes.
  5. Preheat the grill to medium-high heat.
  6. Thread shrimp, scallops, red bell pepper, yellow bell pepper, and red onion onto skewers, alternating ingredients.
  7. Place skewers on the preheated grill.
  8. Grill for 3-4 minutes on each side, or until shrimp is pink and scallops are opaque.
  9. Remove skewers from the grill and sprinkle with chopped fresh parsley.
  10. Serve immediately while hot.
