Ingredients
- 1 pound (454 g) (450 grams) large shrimp, peeled and deveined
- 1 pound (454 g) (450 grams) sea scallops
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 2 tablespoon (30 ml) s olive oil (30 milliliters)
- 2 tablespoon (30 ml) s lemon juice (30 milliliters)
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) salt (5 grams)
- 1/2 teaspoon (3 ml) black pepper (1 gram)
- 1 teaspoon (5 ml) dried oregano (1 gram)
- 1 tablespoon (15 ml) fresh parsley, chopped (15 grams)
- Wooden or metal skewers
Instructions
- Soak wooden skewers in water for 30 minutes if using wooden skewers.
- In a large bowl, combine olive oil, lemon juice, minced garlic, salt, black pepper, and dried oregano.
- Add shrimp and scallops to the bowl and toss to coat thoroughly.
- Let the seafood marinate in the refrigerator for 15-20 minutes.
- Preheat the grill to medium-high heat.
- Thread shrimp, scallops, red bell pepper, yellow bell pepper, and red onion onto skewers, alternating ingredients.
- Place skewers on the preheated grill.
- Grill for 3-4 minutes on each side, or until shrimp is pink and scallops are opaque.
- Remove skewers from the grill and sprinkle with chopped fresh parsley.
- Serve immediately while hot.
