Ingredients
- – 500 grams (1 pound (454 g)) salmon fillets, fresh (or sub with canned salmon)
- – 1/2 red onion, cut into even chunks (sub with green onions)
- – 2 teaspoon (10 ml) beef mustard, or sub with your favourite mustard
- – 1 lime, zested (sub with lime)
- – 50 grams (1/2 cup (120 ml)) oats (sub with panko breadcrumbs instead)
- – 2 teaspoon (10 ml) capers, rinsed & drained
Instructions
- Place a quarter of the diced salmon fillets into a food processor with the beef mustard and blend until smooth.
- Add the rest of the salmon pieces and the red onion, then pulse the mixture briefly until combined.
- Transfer the mixture to a small bowl and incorporate the lime zest, panko breadcrumbs, and capers.
- Shape the mixture into four patties using damp hands. Wrap them in plastic and chill for 30 minutes prior to cooking.
- Warm a grill pan with olive oil over medium-high heat. Cook the patties for four minutes on one side, then flip and grill for an additional two minutes until they are golden and juicy.
- Assemble the burgers with buns, lettuce, tomato slices, and your preferred sauce.

- Use panko breadcrumbs for a crispy texture.
- Swap red onion with green onions for a milder flavor.
- Rinse and drain capers to remove excess saltiness.
