Description

Delight in these grilled oysters topped with rich, garlicky butter that captures the essence of summer barbecues.


Ingredients

  • 12 oysters (in the shell)
  • 2 sticks unsalted butter
  • 2 tbsp parmesan cheese (grated)
  • 2 cloves garlic (minced)
  • 2 tbsp parsley (finely chopped)
  • 2 tbsp chives (finely chopped)
  • 2 tbsp shallots (finely diced)
  • Salt and pepper (to taste)
  • Hot sauce (to serve)


Instructions

  1. Give the oysters a rinse under cold water to remove any grit or shell.
  2. Hold the oyster, cradling the curved side of the shell, with the flat side facing up.
  3. Use a knife to screw into the hinge until it separates the top and bottom shells.
  4. Run the knife along the inside of the flat shell, cutting the top muscle to pop it off.
  5. Gently scrape under the oyster and flip it over.
  6. Place the oysters in their shells over direct heat and grill for 5 minutes.
  7. Place about one tablespoon of butter onto each oyster.
  8. When the butter begins to boil, carefully remove the oysters from the grill.
  9. Let them sit for 5 minutes to cool, then enjoy.

Notes

Consider adding minced garlic into the butter for enhanced flavor. Top with hot sauce for an extra kick.
