Ingredients
- 1 lb carrots
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup balsamic vinegar
- 1 tablespoon honey or brown sugar
- Fresh herbs for garnish (optional)
Instructions
- Preheat the grill to medium heat.
- Peel the carrots and cut them in half lengthwise.
- In a bowl, toss the carrots with olive oil, salt, and pepper.
- Make the balsamic glaze by combining the balsamic vinegar and honey in a small saucepan over medium heat. Bring to a simmer and reduce until thickened, about 10 minutes.
- Place the carrots on the grill and cook for about 8-10 minutes, turning occasionally, until they are tender and nicely charred.
- Drizzle the balsamic glaze over the grilled carrots before serving. Garnish with fresh herbs if desired.
