Ingredients
- 1 kg octopus, cleaned and cut into pieces
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tomatoes, chopped
- 1 cup olive oil
- 1 teaspoon oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add the octopus pieces and cook for about 5-7 minutes, stirring occasionally.
- Stir in the chopped tomatoes, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the octopus is tender.
- Adjust seasoning if necessary.
- Serve warm, garnished with fresh parsley.
