Ingredients
- 1 lb white fish fillets (like cod or haddock)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, diced
- 4 cups fish stock or water
- Juice of 1 lemon
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened.
- Pour in the fish stock or water and bring to a simmer.
- Add the fish fillets and cook until they are opaque, about 5-7 minutes.
- Stir in the lemon juice, and season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
