A heartwarming Greek fish soup filled with fresh fish, vibrant vegetables, and a splash of lemon juice, perfect for family gatherings.

Ingredients

  • 1 lb white fish fillets (like cod or haddock)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, diced

  • Juice of 1 lemon
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened.
  2. Pour in the fish stock or water and bring to a simmer.
  3. Add the fish fillets and cook until they are opaque, about 5-7 minutes.
  4. Stir in the lemon juice, and season with salt and pepper to taste.
  5. Serve hot, garnished with fresh parsley.

Notes

Aim to use fresh fish for best flavor. Taste as you go to achieve perfect seasoning.
