Description
This golden seared cod with herb butter sauce features flaky fish perfectly seared to golden brown, enhanced by a vibrant herb butter sauce.
Ingredients
- 4 cod fillets (6 oz each)
- 2 tbsp olive oil
- Salt (to taste)
- Freshly ground black pepper (to taste)
- 4 oz unsalted butter
- 1 clove garlic (minced)
- 1/2 lemon (juice only)
- 3 tbsp fresh parsley (finely chopped)
- 2 tbsp fresh dill (chopped)
- 1 tbsp fresh chives (chopped)
Instructions
- Pat the cod fillets dry with a paper towel. Season both sides generously with salt and freshly ground black pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the seasoned cod fillets to the pan once the oil shimmers. Cook for 3-4 minutes on each side until golden brown and cooked through.
- Remove the cod from the pan and set aside.
- Reduce heat to medium, then add unsalted butter to the same skillet.
- Add minced garlic, cooking for 30 seconds until fragrant after the butter melts.
- Stir in the parsley, dill, chives, and lemon juice, mixing well.
- Return the cod to the skillet, spooning the herb butter sauce over the fillets.
- Warm for 1-2 minutes and serve, drizzling extra sauce on top.
Notes
For best results, use a thermometer to ensure the cod reaches an internal temperature of 145°F.
