Description

This golden seared cod with herb butter sauce features flaky fish perfectly seared to golden brown, enhanced by a vibrant herb butter sauce.


Ingredients

  • 4 cod fillets (6 oz each)
  • 2 tbsp olive oil
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • 4 oz unsalted butter
  • 1 clove garlic (minced)
  • 1/2 lemon (juice only)
  • 3 tbsp fresh parsley (finely chopped)
  • 2 tbsp fresh dill (chopped)
  • 1 tbsp fresh chives (chopped)


Instructions

  1. Pat the cod fillets dry with a paper towel. Season both sides generously with salt and freshly ground black pepper.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  3. Add the seasoned cod fillets to the pan once the oil shimmers. Cook for 3-4 minutes on each side until golden brown and cooked through.
  4. Remove the cod from the pan and set aside.
  5. Reduce heat to medium, then add unsalted butter to the same skillet.
  6. Add minced garlic, cooking for 30 seconds until fragrant after the butter melts.
  7. Stir in the parsley, dill, chives, and lemon juice, mixing well.
  8. Return the cod to the skillet, spooning the herb butter sauce over the fillets.
  9. Warm for 1-2 minutes and serve, drizzling extra sauce on top.

Notes

For best results, use a thermometer to ensure the cod reaches an internal temperature of 145°F.
