Ingredients
- 1 lb (450 g) mixed seafood (such as shrimp, scallops, and fish fillets)
- 2 tbsp (30 ml) olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup (240 ml) chicken or vegetable broth
- 1 cup (240 ml) heavy cream
- 1 large carrot, diced
- 1 medium potato, diced
- 1 tsp (5 g) turmeric powder
- 1/2 tsp (2.5 g) black pepper
- Salt to taste
- 1/4 cup (30 g) fresh parsley, chopped
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat.
- Add the mixed seafood to the pot and sauté for 3-4 minutes until just cooked.
- Remove the seafood from the pot and set aside.
- In the same pot, add the remaining 1 tablespoon of olive oil.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the diced carrot and potato to the pot and stir well.
- Pour in the chicken or vegetable broth and bring to a boil.
- Reduce the heat to low and simmer until vegetables are tender, about 15 minutes.
- Stir in the turmeric powder, black pepper, and salt to taste.
- Pour in the heavy cream and stir until well combined.
- Return the seafood to the pot and gently stir to combine.
- Cook for an additional 5 minutes to heat the seafood through.
- Remove the pot from heat and stir in the chopped fresh parsley.
- Serve the stew hot.
