Ingredients
- 1 cup (200g) jasmine rice, cooked and cooled
- 2 tablespoons (30g) gochujang (Korean red chili paste)
- 2 tablespoons (30ml) vegetable oil
- 2 garlic cloves, minced
- 1 small onion, finely chopped
- 1/2 cup (75g) green peas, thawed if frozen
- 1/2 cup (75g) red bell pepper, diced
- 8 oz (225g) cooked shrimp
- 2 eggs, lightly beaten
- 2 tablespoons (30ml) soy sauce
- 1 tablespoon (15ml) sesame oil
- 2 green onions, sliced
- Salt, to taste
- Black pepper, to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
- Add the minced garlic and finely chopped onion to the skillet.
- Sauté until the onion becomes translucent, about 2-3 minutes.
- Add the diced red bell pepper and green peas to the skillet.
- Cook for another 2-3 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet.
- Add the remaining 1 tablespoon of vegetable oil to the empty side of the skillet.
- Pour the lightly beaten eggs into the skillet.
- Scramble the eggs gently until they are just set.
- Mix the scrambled eggs with the vegetables.
- Add the cooked and cooled jasmine rice to the skillet.
- Stir in the gochujang and soy sauce, ensuring the rice is evenly coated.
- Add the cooked crab meat to the skillet.
- Toss everything together and cook for 2-3 minutes until heated through.
- Drizzle the sesame oil over the fried rice and stir well.
- Season with salt and black pepper to taste.
- Garnish with sliced green onions before serving.
