Ingredients

  • 1 tablespoon lime juice (15 ml)
  • 1 tablespoon reduced-sodium soy sauce (15 ml)
  • 1 teaspoon grated fresh ginger (5 g)
  • 1 small clove garlic, grated
  • Pinch of crushed red pepper
  • 3 tablespoons vegetable oil (45 ml)
  • 1 pound cooked large shrimp (31-40 count) (450 g)
  • 2 medium (1 1/2 pounds total) zucchini (680 g)
  • 1/4 cup chopped unsalted peanuts (35 g)
  • 1/4 cup (60 ml) chopped fresh mint


Instructions

  1. Combine lime juice, soy sauce, ginger, garlic, and a hint of crushed red pepper in a large mixing bowl. Gradually stir in the vegetable oil until the mixture is well blended. Move 1 tablespoon of this dressing into a separate medium bowl. Add the shrimp to this bowl and mix until evenly coated. Allow it to rest for 10 minutes.
  2. In the meantime, use a vegetable peeler to slice the zucchini into lengthy strips, avoiding any seeds. Place these zucchini strips in the large bowl with the remaining dressing, and mix thoroughly. Evenly distribute the zucchini among four serving bowls, then arrange the shrimp on top of each. Sprinkle with peanuts and mint. Drizzle any excess dressing from the bowl over the top. Add extra crushed red pepper as an optional garnish.
