Ingredients
- 4 cod fillets (6 oz each)
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 1 tbsp sesame oil
- 2 green onions, thinly sliced (for garnish)
- 1 tbsp sesame seeds (for garnish)
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil until combined.
- Place the cod fillets on the prepared baking sheet and brush the glaze evenly over each fillet, ensuring all sides are coated.
- Bake for 12–15 minutes or until the cod is cooked through and flakes easily with a fork.
- Transfer the cod to plates, garnishing with sliced green onions, sesame seeds, and chopped cilantro. Serve with lime wedges.
Notes
Brining the cod in saltwater for 15-30 minutes before cooking helps retain moisture. Consider adding chili paste or lime zest to the marinade for extra flavor.
