Description

A delightful dish featuring cod fillets glazed with a savory and sweet ginger soy marinade, evoking cozy memories of home-cooked meals.

Ingredients

  • 4 cod fillets (6 oz each)
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp sesame oil
  • 2 green onions, thinly sliced (for garnish)
  • 1 tbsp sesame seeds (for garnish)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil until combined.
  3. Place the cod fillets on the prepared baking sheet and brush the glaze evenly over each fillet, ensuring all sides are coated.
  4. Bake for 12–15 minutes or until the cod is cooked through and flakes easily with a fork.
  5. Transfer the cod to plates, garnishing with sliced green onions, sesame seeds, and chopped cilantro. Serve with lime wedges.

Notes

Brining the cod in saltwater for 15-30 minutes before cooking helps retain moisture. Consider adding chili paste or lime zest to the marinade for extra flavor.
