Ingredients

  • 1 pound (454 g) shrimp, peeled and deveined (450 grams)
  • 2 tablespoons (30 ml) vegetable oil (30 milliliters)
  • 1 tablespoon (15 ml) sesame oil (15 milliliters)
  • 3 cloves garlic, minced
  • 1 tablespoon (15 ml) ginger, grated
  • 1 cup (240 ml) pumpkin, diced (150 grams)
  • 3 cups (720 ml) cooked jasmine rice, preferably day-old (600 grams)
  • 2 tablespoons (30 ml) soy sauce (30 milliliters)
  • 2 teaspoons (10 ml) soy sauce (10 milliliters)
  • 2 green onions, chopped
  • 1/2 cup (120 ml) frozen peas (75 grams)
  • 1/4 teaspoon (1 ml) black pepper (1 gram)
  • 1/4 teaspoon (1 ml) red pepper flakes (1 gram)
  • Salt to taste
  • Optional: lime wedges for serving


Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.
  2. Add the shrimp to the pan and cook for 2-3 minutes on each side until pink and opaque.
  3. Remove the shrimp from the pan and set aside.
  4. Add the remaining 1 tablespoon of vegetable oil and 1 tablespoon of sesame oil to the same pan.
  5. Add the minced garlic and grated ginger to the pan; sauté for 1 minute until fragrant.
  6. Add the diced pumpkin to the pan and cook for 5-7 minutes until tender.
  7. Add the cooked jasmine rice to the pan, stirring to combine with the pumpkin mixture.
  8. Pour in the soy sauce and fish sauce; mix well to coat the rice evenly.
  9. Stir in the chopped green onions and frozen peas; cook for 2-3 minutes until the peas are heated through.
  10. Return the cooked shrimp to the pan and mix well to incorporate with the rice.
  11. Season with black pepper, red pepper flakes, and salt to taste; stir to combine.
  12. Cook for an additional 2 minutes to ensure all ingredients are heated through.
  13. Serve the fried rice hot, with lime wedges on the side if desired.
