Ingredients
- 1 pound (454 g) shrimp, peeled and deveined (450 grams)
- 2 tablespoons (30 ml) vegetable oil (30 milliliters)
- 1 tablespoon (15 ml) sesame oil (15 milliliters)
- 3 cloves garlic, minced
- 1 tablespoon (15 ml) ginger, grated
- 1 cup (240 ml) pumpkin, diced (150 grams)
- 3 cups (720 ml) cooked jasmine rice, preferably day-old (600 grams)
- 2 tablespoons (30 ml) soy sauce (30 milliliters)
- 2 teaspoons (10 ml) soy sauce (10 milliliters)
- 2 green onions, chopped
- 1/2 cup (120 ml) frozen peas (75 grams)
- 1/4 teaspoon (1 ml) black pepper (1 gram)
- 1/4 teaspoon (1 ml) red pepper flakes (1 gram)
- Salt to taste

Instructions
- Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.
- Add the shrimp to the pan and cook for 2-3 minutes on each side until pink and opaque.
- Remove the shrimp from the pan and set aside.
- Add the remaining 1 tablespoon of vegetable oil and 1 tablespoon of sesame oil to the same pan.
- Add the minced garlic and grated ginger to the pan; sauté for 1 minute until fragrant.
- Add the diced pumpkin to the pan and cook for 5-7 minutes until tender.
- Add the cooked jasmine rice to the pan, stirring to combine with the pumpkin mixture.
- Pour in the soy sauce and fish sauce; mix well to coat the rice evenly.
- Stir in the chopped green onions and frozen peas; cook for 2-3 minutes until the peas are heated through.
- Return the cooked shrimp to the pan and mix well to incorporate with the rice.
- Season with black pepper, red pepper flakes, and salt to taste; stir to combine.
- Cook for an additional 2 minutes to ensure all ingredients are heated through.
- Serve the fried rice hot, with lime wedges on the side if desired.
