Ingredients
- 2 medium zucchinis
- 1 pound shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/2 cup shredded cheese (like mozzarella or parmesan)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the zucchinis in half lengthwise and scoop out the center to create boats.
- In a skillet, heat olive oil over medium heat and add minced garlic. Sauté until fragrant.
- Add shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
- Mix in breadcrumbs, season with salt and pepper, and cook for another minute.
- Fill the zucchini boats with the shrimp mixture and top with shredded cheese.
- Place the zucchinis on a baking sheet and bake for 15-20 minutes until the cheese is bubbly and golden.
- Garnish with chopped parsley before serving.
