Description

Delightful zucchini boats filled with garlicky shrimp, breadcrumbs, and cheese for a satisfying and healthy meal.


Ingredients

  • 2 medium zucchinis
  • 1 pound shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/2 cup shredded cheese (like mozzarella or parmesan)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. In a skillet, heat olive oil over medium heat and add minced garlic. Sauté until fragrant.
  4. Add shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  5. Mix in breadcrumbs, season with salt and pepper, and cook for another minute.
  6. Fill the zucchini boats with the shrimp mixture and top with shredded cheese.
  7. Place the zucchinis on a baking sheet and bake for 15-20 minutes until the cheese is bubbly and golden.
