Ingredients

  • 454 g large shrimp, peeled and deveined
  • 1/2 tsp (3 ml) baking soda
  • 1 tsp (5 ml) salt
  • 2 tbsp (30 ml) vegetable oil
  • 5 cloves garlic, finely chopped
  • 1 tbsp (15 ml) fresh ginger, peeled and finely chopped
  • 1 large shallot, finely chopped
  • 6 stalks green onions, roughly chopped
  • 1 tbsp (15 ml) chili crisp
  • 2 tbsp (30 ml) mayonnaise
  • 2 tbsp (30 ml) soy sauce
  • 1 tsp (5 ml) sriracha sauce


Instructions

  1. Marinate the shrimp. Place the shrimp in a bowl, sprinkle with salt and baking soda, and massage them with your fingers until they are well coated. Let them sit in the brine for 15 minutes. Afterward, rinse the shrimp with cold water and dry them with a towel.
  2. Prepare the sauce. Combine all the sauce components in a bowl and set it aside for later use.
  3. Cook the aromatics. Heat oil in a pan over medium-high heat. Once the oil is hot, add garlic, ginger, and shallot. Sauté for around a minute.
  4. Cook the shrimp and green onions. Add the shrimp to the pan and cook for 4-5 minutes until they are fully cooked. Add the green onions and stir for an additional minute.
  5. Finish with the sauce and serve. Pour the prepared sauce over the shrimp and mix until they are thoroughly coated. Transfer to a serving dish and enjoy with rice.

  • Consider marinating the shrimp with a touch of soy sauce or rice vinegar before cooking for added flavor.
