Ingredients
- – 1/4 cup (60ml) soy sauce
- – 1/4 cup (60ml) low sodium beef broth
- – 2 tsp (10ml) toasted sesame oil
- – 1 tbsp (15ml) honey
- – 6 garlic cloves, minced
- – 1 tsp (5 ml) freshly grated ginger
- – 1 tbsp (15 ml) tapioca flour
- – 2 tbsp (30 ml) vegetable oil
- – 1 head broccoli, cut into small florets
- – 1 red bell pepper, core removed and thinly sliced
- – 1/2 red onion, thinly sliced
- – 1 pound (450g) shrimp, peeled and deveined
- – 1 tsp (5 ml) kosher salt
- – 1/2 tsp (3 ml) freshly ground black pepper
- – Chili oil optional for serving
Instructions
- In a small bowl, blend the sauce components until they are thoroughly mixed. Put aside.
- Warm the oil in a large nonstick skillet over medium heat. Introduce the broccoli, bell pepper, and onion, and cook until the vegetables are slightly soft, around 4 to 5 minutes.
- Add the shrimp, along with salt and pepper, to the skillet and continue cooking, stirring occasionally, until the shrimp start to turn pink (they don’t need to be completely done yet).
- Pour the sauce into the pan and let it simmer, stirring frequently, until the shrimp are fully cooked and the sauce has thickened, coating the shrimp evenly, about 4 more minutes.
- Serve the dish as is or over cooked rice, and drizzle with chili oil if you like.
