Ingredients

  • – 1 1/2 tablespoons olive oil, divided (22 ml)
  • – 1 pound medium raw shrimp (454 g)
  • – 1/2 teaspoon smoked paprika (2.5 ml)
  • – 1/2 teaspoon Italian seasoning (2.5 ml)
  • – Kosher salt and ground black pepper, to taste
  • – 1 yellow onion, diced
  • – 3-4 garlic cloves, minced
  • – 1 cup arborio rice (240 g)
  • – 4-5 cups low-sodium vegetable broth, hot (960-1200 ml)
  • – 1/2 cup grated alternative cheese (50 g)
  • – 1/4 cup chopped parsley (15 g)


Instructions

  1. Warm up 1 tablespoon of the olive oil in a large pan on medium heat. Lay the shrimp in a single layer and season with smoked paprika, Italian seasoning, along with salt and pepper. Let them cook undisturbed for 2 minutes, flip them over, and continue cooking until they turn pink and opaque, approximately 1-2 more minutes. Transfer to a plate.
  2. In the same pan, pour in the rest of the oil. Sauté the diced onion and minced garlic for about 3-4 minutes on medium heat.
  3. Add the arborio rice and stir continuously for about 1 minute.
  4. Gradually add two cups of the hot vegetable broth, stirring frequently until the liquid is mostly absorbed.
  5. Continue this process, adding the broth one cup at a time, until all the broth is absorbed and the rice is creamy and tender.
  6. Take the pan off the heat and mix in the grated alternative cheese and chopped parsley.
  7. Serve the risotto with the cooked shrimp on top.

Notes

  • Consider using seafood or chicken broth instead of vegetable broth for a richer flavor in the risotto.
  • Add extra vegetables like peas or bell peppers for more color and nutrients.
  • Experiment with vegan parmesan or cheddar cheese to customize the dish to your liking.
