Ingredients
- – 1 1/2 tablespoons olive oil, divided (22 ml)
- – 1 pound medium raw shrimp (454 g)
- – 1/2 teaspoon smoked paprika (2.5 ml)
- – 1/2 teaspoon Italian seasoning (2.5 ml)
- – Kosher salt and ground black pepper, to taste
- – 1 yellow onion, diced
- – 3-4 garlic cloves, minced
- – 1 cup arborio rice (240 g)
- – 4-5 cups low-sodium vegetable broth, hot (960-1200 ml)
- – 1/2 cup grated alternative cheese (50 g)
- – 1/4 cup chopped parsley (15 g)
Instructions
- Warm up 1 tablespoon of the olive oil in a large pan on medium heat. Lay the shrimp in a single layer and season with smoked paprika, Italian seasoning, along with salt and pepper. Let them cook undisturbed for 2 minutes, flip them over, and continue cooking until they turn pink and opaque, approximately 1-2 more minutes. Transfer to a plate.
- In the same pan, pour in the rest of the oil. Sauté the diced onion and minced garlic for about 3-4 minutes on medium heat.
- Add the arborio rice and stir continuously for about 1 minute.
- Gradually add two cups of the hot vegetable broth, stirring frequently until the liquid is mostly absorbed.
- Continue this process, adding the broth one cup at a time, until all the broth is absorbed and the rice is creamy and tender.
- Take the pan off the heat and mix in the grated alternative cheese and chopped parsley.
- Serve the risotto with the cooked shrimp on top.

- Consider using seafood or chicken broth instead of vegetable broth for a richer flavor in the risotto.
